Signal. Erases messages. You can adjust time period. It’s an app. Go to App Store and search for it. Then yo can read up on it.

Signal is widely accepted as “the best” but wickr is popular with dudes in this game due to the anonymity of setting up the account. The way encryption works it cannot reasonably be decrypted, so even what’s app will protect the content of the messages but it is all about physical access to the device and metadata.

Signal set the standard for security. Snowden popularized.
But I think that several of the others mentioned have utilized much of the same security measures now. Whatsapp incorporated part of Whisper's ("Signal") security protocol.
These days, I think all messenger apps can be compromised.... but all that is at higher end of federal/national security crap, not little gear related peeps like us.

Wire is a good one as well, and works nearly like Wickr did.
